I think 500-700 is a little on the low end. Without knowing what your interests are I would say $100 a day per person.

My fiance and I went down from a sun and left thur. We prob spent about 400 or so and we ate out the whole time. We didnt do any expensive activities like fishing or anything though because thats not why we went, so it all depends on what u want to do.
